Food gave Cole direction when nothing else did.

What started as a search for purpose turned into a journey across the country—California, the coast of North Carolina, a cheese farm in Indiana, and eventually Colorado. Along the way, he discovered something deeper than just cooking: food is real. It’s hands-on. It connects people.

For Cole, the kitchen isn’t just a workplace—it’s where life happens. It’s where stories are shared, where people come together, and where meaning is created.

Grounded in faith, family, and a deep respect for the craft, Cole brings a perspective to Big Spoon that goes beyond product—it’s about building something that actually matters.

Nickolas Ito is, in his own words, a kitchen rat at heart.

With over 15 years in restaurants, the kitchen isn’t just something he does—it’s who he is. From long shifts to the grind of daily service, Ito has lived every side of the industry.

He’s seen the highs, the lows, and everything in between—and that experience shows up in every decision behind Big Spoon. This isn’t theory. It’s not guesswork. It’s built from real time in real kitchens.

Cole and Ito met in 2016—brought together by the world of artisanal cheese and a shared love for kitchen chaos.

What started as friendship quickly turned into something more. Between experimenting with off-the-wall ideas like barrel-aged pickles and mozzarella brownies, and navigating the realities of restaurant life, they found themselves constantly talking about what the industry could be.

They’ve been the line cooks. They’ve been the problem. They’ve been the leaders. And through it all, they saw the same pattern—low morale, poor communication, and leadership driven by ego instead of purpose.

Big Spoon Clothing is a reflection of their shared belief: that the industry can be better—and it starts with how you show up.
